HARVEST: handpicked middle of September with manual selection of the grapes.
VINIFICATION: crio-maceration for 12 hours at 8/10 °C. Soft press of the grapes. The must is clarified through cold settling for 24 hours at 8 °C and fermented in stainless steel tanks for 3 days. AFFINATION: in French oak barrels for 6 months at constant temperature in natural caves.
COLOUR: yellow straw with golden shades
NOSE: the mineral notes stand out together with a pleasant toasted hazel nut nuance and mature fruits.
PALATE: rich and zesty with body and structure. Nutty finish typical of this local grape with impressive length
FOOD PAIRING: white meats or fish dishes with a rich sauce
