HARVEST: handpicked early September for the Chardonnay, middle of September for the Sauvignon Blanc
VINIFICATION: crio-maceration of the Chardonnay for 12 hours at 8/9°C, followed by a soft press of the grapes. The must is clarified through cold settling for 24 hours at 8°C and fermented in stainless steel tanks at a controlled temperature of 15°C. AFFINATION: in bottles for at least 2 months
COLOUR: yellow straw
NOSE: pleasantly intense with citrusy flavours, white delicate flowers, mineral return.
PALATE: well balanced supported by a good acidity and minerals. Intense with long persistency

FOOD PAIRING: fish, spelt soup, fresh cheeses
