The white wines follow the process of soft wine-pressing and couple themselves with maximum attention paid to temperature during their fermentation.
For the red wines great care has been observed during maceration of the grapes, as well as attention paid to the control of the extractive processes of polyphenol and tannins from the peel.
Finally, a minimum of filtrations guarantees the organic characteristics of the wines.
